In the cellar, we are particularly careful to make sure that the must is fine. Filtering is precise and measured, our aim is to preserve pure fruit while highlighting the natural elegance of each cuvée. Nothing is left to chance: each action aims for clarity, balance and precision.
For some, chosen, vinifications, we have purchased new oak barrels; chosen for their quality and how well they can contribute structure and depth, without ever masking the terroir’s expression.
Tastes evolve from one era to the next: the more tannic wines of yesteryear have given way to more rounded, supple and elegant cuvées. These changes sustain our resolve to move forward, to refine our actions and to listen to our vines and to the people who enjoy our wines!
Maison Jambon belongs to the Vignerons Indépendants (independent vinegrower-winemakers) federation. It brings together French vinegrower-winemakers who tend their vines then craft and sell their wines themselves. It spotlights the diversity of our terroirs and underscores the history, authenticity and ties each winemaker has to their vines. Maison Jambon is also committed to the federation’s charter, which combines ethics and know-how.
